Dessert boards full of cookies, brownies, and strawberry shortcake in a cup. Veggies with ranch and pasta salad in single-serve cups. Brunch boards with mini quiches, pancakes, and waffles. Chicken and waffles on skewers. And, of course, intricate charcuterie boards full of cheese, meat, crackers, jams, and olives. These are just some of the things Bee A Little Cheesy offers for your event.
“I saw charcuterie was becoming more popular a few years ago,” says Miki Stripling, owner of the Richmond, Texas catering business. “My food is a twist on the traditional charcuterie board. We have soup stations, chips and dips in single-serve cups, mini sandwiches and sliders, kabobs, even brunch boards that will make your mouth water.”
“We started by making charcuterie boxes and trays, and grew into complex grazing tables and single-serve snacks,” she continues. “We’ve done corporate events for companies like Best Buy, Baylor Orthopedic and Spine, Rejuven8 Medical Spa, and many others, plus lots of bridal showers, birthdays, baby showers, and homeowners association events.
Everyone is hosting something, so there are endless possibilities.”
Bee A Little Cheesy is a family affair of powerful women. Miki’s two daughters, ages 24 and 19, help her prep and set up her orders, while her mom helps make the food.
“I learned a lot of my cooking skills from my mom. She loves to cook. She helps me prepare the orders and get them out the door.”
Miki recently started using a beautiful white serving cart that looks like it was lifted directly out of a southern tea party.
“I have always loved decorating for parties, and I was always very creative about putting parties together,” Miki explains. “We are creating food art.”
Bee A Little Cheesy also offers special Mother’s Day boxes or trays.
“I love a tea party for Mother’s Day or a bridal shower,” she says. “I love working with florals and different colors, collaborating with the client to make it personal for them. Every display is different.”
